On lazy Sundays like I had today, I just want something easy – that way I can spend more time outside in the beautiful weather and not turn on the oven. With a few quick steps and a bit of time in the fridge you have can have an easy, fresh snack or dessert to enjoy outdoors — no baking needed!
Recipe:
1 can (13.66 ounces) unsweetened organic coconut milk
1/2 C chia seeds
1/4 C maple syrup
5 fresh organic strawberries halved
1 tsp vanilla extract
pinch of cinnamon
- In a blender, pulse the coconut milk, strawberries, vanilla, maple syrup and cinnamon until smooth
- Pour the blended mixture into a large bowl and whisk in the chia seeds
- Place the bowl into the fridge at least 4 hours
- Scoop into a cup and layer in anything you want! I put some fresh berries, slivered almonds and shaved coconut in these
